As an individual player, and not as a team owner, is there any real purpose for salary? Do I get any sort of bonuses for my players earning 700k as opposed to 650k?

As a player, not directly.
Differences like 700 vs 650 are determined mostly by the traits you took - so your WR took Soft Hands and Shifty, making him need to be paid 20% more than a "basic" WR. But at the same time, traits that cost salary generally have large bonuses, making the player better (inderectly).
From the team's end, they can't pick your actual salary - the options are "low", "medium" and "high", determined by your position, level, and traits.
Medium contracts are the standard, no bonus/penalty. Low contracts make chemisty get earned at half speed, and cap chemistry at 50 (making your player play below potential). High contracts make chemistry gain 50% faster, and also give you a 25 point bonus to the Heart stat (making you play a bit better).
