I thought the minimum cap for skills is 25, no matter how low you set the attributes. So if I create a superstar, the lowest cap should be 35. But my superstar DT has a sprinting cap of 30...

Superstars are adding +10 to the skill cap. When a player is at the minimum, they're being hard capped. The true skill is lower than 25 (which affects the cap booster btw). So your DT had a true cap of 20 +10 superstar.
