If you can not find a team for you players will they still gain levels and earn SP?

my guess is no, but also I would wager that if you aren't on a team right now you don't want to be on a team or you joined the QB/HB crowd

If you are behind on XPs, you can retire and rebuild (make sure it is free) and choose the catch-up on XP option.
If you are having that problem, join Wu Dang and you won't have to worry.

It is pretty self-explanatory. If you go to the create a player right now, there should be information about it.
Note: your player will not get to play the games at the end of the career that he missed at the start. Choose no catch-up and you still get all your games, but you are going to be playing from behind. Choose catch-up and you miss games, but you play from a caught up SP. Chem is not caught-up obviously.

What happens if you are not on the depth chart and you don't play in the game. Do you still get XP?

some teams dont have auto-offer on. There are definitely owned teams that don't have DEs... a matter of whether they are actively looking for players is another question.
