when a DE gets a FF on the QB, does it count as a Sack like in real life?

in the NFL, yes, not sure about other leagues. Even if the DE doesn't touch the QB, and just knocks the ball out of his hand, it counts as a sack unless its on a rushing play.

Yea they call it a strip sack...James Harrison does it all the time.
