As promised, the numbers for the Eastern Conference. Keep in mind the numbers are normalized to within their own conference so the numbers between conferences don't exactly match up, but they are definitely mostly comparable.
I have roughly compiled a data analysis of the current rosters and here are the results I have determined. This is not supposed to be perfect in anyway, especially since I developed the formula on the fly while wasting time during one of my classes
The numbers next to the team represent the score out of 100 that the team recieved
Lumberjack City Yaks - 94.13
Willow Creek Phantoms - 92.94
Canadian Bacon - 92.92
Concordia Tornadoes - 88.73
Paradise Cheeseburgers - 88.04
Prince Edward Island Sharks - 87.17
Edmonton Moose - 85.64
Aspermount Roughnecks - 81.28
Sherbrook Colonels - 80.50
Gravenhurst Ghost Ridahz - 80.17
Bronx City Pulp Fiction - 80.05
Toronto Terror - 69.97
Fort Myers Mustangs - 64.44
Halifax Fire - 62.90
District Challengers - 50.77
Vancouver Valients - 13.62
These numbers were attained by taking each team by their current roster and breaking them into the following categories:
Starting Offensive Line - 25
Starting Offensive Skill - 20
Starting Defensive Line - 25
Starting Defensive Skill - 15
# Depth * Average Depth Level - 15
Each category was normalized to 1 by the max value that a team had in that category and then multiplied by the value next to the category to get a score out of 100.

One other note, for determining the average starting levels I included a 0 if they did not have a player for that position currently. Also I went with the assumption of a standard 4-3 defense. Sorry if your score did not reflect you running a 3-4.
