How often do you guys blitz?

depends on the opponent.

between 20-45%

I don't like giving one percent. You're going to blitz a lot more to stop the run on 3rd and inches then you are on 3rd and 12. Just find the opponents tendencies, strengths, and weaknesses on their Line and try to take advantage.

Only on third and short and goalline

Now that blitzing sucks (the players run straight at the linemen, and don't bother running around, or using Agility to get past, except for the D linemen), both teams I'm on stick to 0% except on goalline, to stop a run up the middle.

I think this is a terrible strategy. Blitzing works great if you know how/when to use it, and you should be using it a LOT more than that.

I set it to blitz quite a lot, as I see my defense as a blitzing team. the base blitz is 45%. But in the AI there is a lot of different packages depending on situations etc.

Out of all sacks and hurries, (LB) Ken Harvey is the only LB getting some (2 hurries).

actually if you DL is good, he can take out the OL and make room for the LB like this play

And sometimes the OL go for the LB's instead of the DL. And sometimes the LB shoots a gap the back wanted to run through. And sometimes you blitz a position OTHER than LB.

well for the first situation, the DE should be able to knock the qb if he goes up guarded.

Yes, if you can be 2nd in your league in sacks without ever blitzing (http://goallineblitz.com/game/team_stats.pl?league_id=92&conference_id=0&stat=defense&sort=sacks&playoffs=0), then you don't even NEED to really plan a defense. 90% of teams don't have such a dominant D-line though, and not ever blitzing will hurt them against an opponent who gameplans well.
