If you only missed three boosts you will be able to make them up right before your player hits plateau.
If you did miss three boosts just make sure you boost your player from 70 to 73 in the preseason before your player does hit day 281 or what ever the last day it is before you go into plateau

So if I am at 67 right now at Day 268 with 3 boosts left this season I am good then correct? Do my boosts this season, then to 73 before Day 0, then I can still hit 79?

Yes, this season you boost to level 70 then next season make sure you boost I believe it is before day 1, (maybe boost day 0 or just before that to make sure) taking your dot to level 73.
Then when you hit plateau you will get your six boosts taking you to level 79
