Also, in this game, the more things you try to be good at, the less good at them you'll be. Sometimes you have no choice but to try to specialize in multiple things just due to the nature of a position, but try to focus in as much as possible, and if possible, try to focus on specialties that are somewhat compatible with each other.
To use your example, a dot that is great in coverage is going to need more Speed and Agility at the expense of Strength and Tackling, while a dot that is great at forcing fumbles will need more Strength and Tackling at the expense of Speed and Agility. So, you can see why trying to build a dot who is great at both will simply result in a dot that is great at neither.
