Catching the higher the better as it helps you catch the ball clean (while running) and also the higher the catching the further downfield you can go. There's enough stuff intermediate off of cuts with FB routes that you would be fine with 80 catching just working off that cut separation, but it can be nice to still win 1v1 battles when you have a defender on you (double coverage zone was prevalent in the playoffs vs my team, but the FB still won in part due to his catching ability).

Because juke is incredibly powerful. What you should ask yourself, is why put so many SP/VA/Resources, into juke + 1 piece of AE + 15 VP's if you aren't serious about using fakes to give you a significant boost when running routes. You are investing a lot to juke people to help make plays. Giving up power with only one +% piece in it means you won't be as good at doing that action as others are or as you can be. GLB is a game of battle rolls, and as more defenders get +avoidfake% equip, that 2nd piece of fake% will give you an edge as well. +7.5% is incredibly powerful still, and is more value than +6 in an SA (which is only worth at most 24 SP).
