What should a long snapper look like? A pass blocker or a run blocker? I don't want him to get pancaked and cause a potential tackle or block of the punter or kicker.

I've never seen nor heard of a long snapper build.

I mean to say, should a long snapper be strong or agile to protect the kicker/punter?

Punts can't be blocked in GLB and kick blocks have nothing to do with where the defenders end up. Long snappers should simply be someone with the speed to get down in punt coverage.

A STOP Center works good if you have one (or several)... if not, a pass-block guard or pass block center (which I doubt... I haven't seen many of those ever). If none of those are available, try a DE or fairly fast DT (like a pass rusher build).

You want someone faster than that. Never use a pass blocking OL or any kind of DL (unless it's all speed eq) at long snapper.
