Ingredients:

1 or 2 whole muskrat (skinned)
6 potatoes cut in half
3 thick slices of salt pork

Dumpling Recipe: (To be added later)
2 c of flour
1 tsp of baking powder
A dash of salt
Add about � c of milk or more( a bread dough consistence) to ingredients

Process:

Put the muskrat in a medium-sized pot and cover with water. Cover the pot and boil for half an hour. Then add the potatoes, cover and continue to cook until the potatoes are partially done. Fry the salt pork separately and add to the mixture. Now add the dumplings to the stew (about a tablespoon of dough per dumpling) . Cover and cook for about 10 minutes. Remove the cover and continue to cook for another 10 minutes. Can be eated with fry bread (tumasis). The feast is on!

Now could I substitute the potato for any vegetable of my choosing?
And would adding carrots/celery etc take away from the general flavor of the muskrat, I'd like to enhance its flavor, not over-power it.

Looks like it's wildlife either way for you boys...either you're gonna be eating some muskrat, or some crow.

You better watch out.....Muskrats are wild animals and are not easily skinned
