Yes, the flat is viable to cover routes on that side, but as an OC if I noticed that I would send a HB streak right up that seam, and he would be uncovered. You can do a lot to hide the deficiencies, I just don't know if it would be worth the effort.

Not like you have to use the same defensive call all the time against any specific formation.

Also, I like the idea of being able to shift the weak side DT as far outside as possible and then using a RDE as far outside as possible that took speed to 81 cap, then agility to 73 cap and put all equipment in speed.

I'll definitely try it next season when I can get to work on some defensive plays. I don't want to tinker with my team's D AI this season. I think we have just the personnel to make it work too. Although we're missing one more strength based DE, but I'm sure my pass rusher will work decently well (will have 78+ strength by then w/o equip).

I wish we had Minnesota Fats still. Would be killer to have him and my DT for this!

This is interesting because I actually tried doing the opposite recently-- a team that is usually exclusively 3-4 (and doesn't have any depth at NT with just 3 guys there) was facing a particularly brutal inside running attack so we took a MLB who is built like a DT and lined him up over the center and moved the other guys to the tight end side. Actually worked better than a GLB 4-3 where no one is over the center in this one example.
